Lithography is a method of printing using a stone or a metal plate with a completely smooth surface.  Lithography uses oil, fat, or gum arabic to divide the smooth surface into hydrophobic regions which accept ink and hydrophilic regions which reject ink to become the background.  Most books are now printed using offset lithography.
